{Eat up!} White Chili

Hey y’all! (I’m embracing my North Carolina culture, since we’ve been here for 3 years now!) 🙂

I tried this recipe from the Nov 2014 issue of Runner’s World.  They have some great recipes, and this one was no exception!

Gathering up the ingredients was easy–I had several on hand–and I’m even going to keep track of costs for you because that’s a big deal to me (plus I’m a nerd!).  I want recipes that are quick, healthy, and cheap.  This one fits the bill!

White Chili

  • 2 T. avocado or canola oil [I didn’t have either, so I used olive oil] ~$0.10
  • 1 Lb. ground chicken or ground turkey [I used turkey, 85% lean] $2.78
  • 1 white onion, diced [I used yellow… do you see a trend? haha. I can’t seem to follow a recipe to a T] $0.75
  • 2 cloves garlic, minced ~$0.07
  • 2 light green wax peppers, diced [I couldn’t find these so I used Pablano peppers–they were yum! Not spicy.  Altho I think I got overcharged…] $0.94
  • 1 can (15 oz) yellow or red diced tomatoes ~$0.75
  • 2 t. chili powder  ~$0.02
  • 1 t. cumin  ~$0.02
  • Salt & pepper to taste
  • 1 can (15 oz) white beans, drained [I used cannellini & missed the note about draining it… oops!] $0.68

White chili supplies

  • Heat oil in a large soup pot over medium heat.
  • Add turkey and cook until just barely pink, breaking the meat into crumbles while cooking.
  • Add onion, garlic, & peppers.  Cook 2 min or until beginning to soften.
  • Add tomatoes (with juices) and scrape to release any browned bits stuck to the pot’s bottom.
  • Stir in chili powder, cumin, salt & pep to taste.
  • Gently stir in beans.  Bring to a boil, reduce heat to low, simmer 30 min, stirring occassionally.  Serves 4.
  • Per serving: 278 cals, 24 g carbs, 6 g fiber, 31 g protein, 8 g fat.Chili cooking

Total cost: $6.11 [most of this was purchased at the Neighborhood Market Wal-Mart down the road. I’m not a coupon person by any means, but you could probably find better prices on some of this.]

Per serving cost: $1.22 [I got 5 servings since my boys won’t eat chili]

The magazine suggested serving it over steamed cauliflower & white cheddar cheese, but I missed that note, so I ate mine with toast & avocado 🙂
