I made these burgers for a little get-together with friends months ago, and hadn’t made them since! I like them because 1) Black beans & Quinoa are two of my faves sources of veggie (non-meat) protein, 2) I have all the ingredients on hand, and 3) you can pair it with tomatoes and avocado–another two of my favorite foods 🙂
Plus, this is a (mostly) simple recipe. Cook the quinoa, dump everything in a bowl, shape into patties, pan-sear real quick, then bake in the pan. Except today I had a hiccup, since I was practicing one of my favorite time-saving tips: Cook a double batch. You already have the ingredients out. The kitchen is already messy. Just freeze the extra servings for another day. (Don’t forget to date them & put ’em in freezer safe containers! Well, I admit I don’t date… because I know I’ll consume everything in less than a few weeks, and 3 months is the recommended freezer time… I digress as always! Lol)
So I made a double batch. Maybe I messed up the amount of quinoa. In any case, my burgers fell apart a little bit today. But the GREAT part is, it still tasted DELISH! Here’s a close up:
SO good! Plenty of flavor, very clean, & nice and light for summer time! I went without the bun and used some bib lettuce leaves. Then I paired with some sweet potato fries. Yum!

I also made ten of these bad boys & sauteed some zucchini, squash, orange pepper, and onion with some Mrs. Dash Garlic & Herb… soooooo good! I’m hooked on veggies now! When fresh & prepared right, they are so flavorful. OK, enough clean eatin’ preaching. Have a wonderful week!
